Hey there! I'm Paul, and every single night I'm in the kitchen cooking dinner for my family. The catch? Our household is 100% gluten-free. It started as a health thing, and honestly, once you get the hang of it, you don't really miss the gluten.
The Story
When gluten-free became our reality, I quickly discovered two things: most gluten-free recipes online are either overly complicated or taste like cardboard, and the good ones are buried under 2,000 words about someone's trip to Tuscany.
So I started collecting recipes that actually work. Some I found online and modified. Some I created from scratch. Some came from friends, family, or happy accidents. All of them have been tested in my kitchen—multiple times—and served to actual humans who came back for seconds.
Here's my promise: Every recipe on this site is one I've personally made and continue to cook regularly. If it's here, it's because my family actually eats it. No "tested once and forgot about it" recipes. These are the real rotations.

A Note on "Gluten-Free"
I know the struggle. The constant label-reading, the restaurant anxiety, the well-meaning relatives who don't realize most soy sauce has gluten or that some cornmeal isn't safe. I get it. That's why I share not just the recipes, but the specific brands we use at home.
Most recipes here started as something I found online that used regular flour or other gluten-containing ingredients. I've done the work of converting them—swapping in GF flour, finding the right substitutes, testing until it actually tastes good. No more guessing whether that random recipe will work with gluten-free ingredients. I've already figured it out for you.
That said, always double-check your specific ingredients. Manufacturers love to sneak things in, and your health isn't worth the risk.
